Greek Chicken

  • 1 lb. chicken breast, boneless and skinless, cut into 1-inch cubes

  • 3 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 1 tablespoon red wine vinegar

  • 1 tablespoon Greek seasoning

  • 1/4 teaspoon sea salt

Tzatziki Sauce

  • 8 oz. full-fat plain Greek yogurt

  • 1/2 medium Persian cucumber, grated

  • 2 cloves garlic, grated

  • Zest of 1 lemon

  • 1 tablespoon lemon juice

  • 2 tablespoons fresh dill, minced

  • Sea salt, to taste

  • Black pepper, to taste

Red Wine Vinegar Dressing

  • 3 tablespoons olive oil

  • 1 tablespoon red wine vinegar

  • 1 teaspoon fresh oregano, minced

  • Sea salt, to taste

Salad Toppings

  • 1 large Persian cucumber, diced

  • 1 cup cherry tomatoes, halved

  • 1/2 cup red onion, thinly sliced

  • 1/3 cup Kalamata olives, pitted

  • 4 oz. feta cheese, crumbled


Instructions

  1. Marinate the Chicken: In a bowl or sealable container, combine the chicken, olive oil, lemon juice, red wine vinegar, Greek seasoning, and sea salt. Marinate in the refrigerator for at least 30 minutes, or up to overnight.

  2. Make the Tzatziki: In a medium bowl, stir together the Greek yogurt, grated cucumber, garlic, lemon zest, lemon juice, dill, salt, and pepper. Chill until ready to serve.

  3. Cook the Chicken: Heat a skillet over medium-high heat. Add the chicken and its marinade. Cook for 3–4 minutes per side, or until golden brown and cooked through (165°F internal temperature).

  4. Prepare the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, oregano, and salt.

  5. Assemble the Bowls: Divide the cooked chicken into four bowls. Top each with cucumber, tomatoes, red onion, olives, and feta. Drizzle with the dressing and top with tzatziki just before serving.

Notes

Make it low-carb by skipping the rice and serving over romaine or cauliflower rice.
