Description

Goat Cheese Grilled Cheese with Honey is the perfect sweet-and-savory comfort sandwich. Crispy golden sourdough, creamy tangy goat cheese, and a warm honey drizzle come together in minutes for an easy lunch or cozy weeknight bite.

Ingredients

Scale
  • 4 slices sturdy sourdough or whole grain bread

  • 4 ounces goat cheese (plain or herbed)

  • 23 tablespoons honey (plus more to taste)

  • 2 tablespoons butter, softened (or olive oil as substitute)

  • Fresh thyme leaves (optional, for garnish)

Instructions

  1. Preheat the skillet:
Heat a skillet over medium heat.

  2. Assemble the sandwich:
Spread goat cheese evenly over two slices of bread. Drizzle honey over the goat cheese. Top with the remaining bread slices.

  3. Butter the bread:
Spread butter evenly on the outside of each sandwich.

  4. Grill the first side:
Place sandwiches in the skillet. Cook for 3–5 minutes until golden brown and crisp.

  5. Flip and finish:
Carefully flip and cook another 3–5 minutes until the second side is golden and the goat cheese is warm and creamy.

  6. Serve:
Remove from heat, drizzle with a little extra honey if desired, sprinkle with fresh thyme, slice, and serve immediately.

Notes

Use medium heat to avoid burning the bread before the cheese warms through.

Goat cheese won’t stretch like mozzarella—it becomes soft and creamy.

Add sliced pear, apple, or crushed walnuts for extra flavor and texture.

For a lighter option, use olive oil instead of butter.
