Description
This Gluten Free Mediterranean Baked Cod is light, bright, and full of bold lemon-garlic flavor. Tender cod is seared, baked, and finished in a buttery olive oil sauce for an easy, restaurant-style dinner made at home.
Ingredients
For the Cod

1.5 lb cod fillets (sustainably sourced if possible)
For the Coating

1/2 cup gluten-free all-purpose flour (1:1 blend)

1 tsp ground coriander

3/4 tsp paprika

3/4 tsp ground cumin

3/4 tsp salt

1/2 tsp black pepper

1/4 tsp red pepper flakes
For the Lemon-Garlic Sauce

6 tbsp fresh lemon juice

5 tbsp extra virgin olive oil

2 tbsp unsalted butter

6 garlic cloves, finely minced
For Serving

1/4 cup fresh parsley, finely chopped
Instructions

Prep the Cod
Pat cod dry with paper towels and set aside. -
Make the Coating
In a bowl, mix gluten-free flour, coriander, paprika, cumin, salt, pepper, and red pepper flakes. -
Prepare the Sauce
Preheat oven to 400°F. Whisk lemon juice, olive oil, and melted butter. Stir in minced garlic. -
Coat the Fish
Dip cod into the lemon-garlic sauce, then dredge in the flour mixture, shaking off excess. -
Sear
Heat 2 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear cod 2 minutes per side until golden. -
Bake
Pour remaining sauce over the fish. Transfer skillet to oven and bake 8–10 minutes, until flaky and opaque. -
Finish
Sprinkle with fresh parsley and serve with pan juices spooned over the top.
Notes
Use a gluten-free 1:1 flour blend or rice flour for best results.
Cod is done when it flakes easily with a fork—don’t overbake.
If you don’t have an oven-safe skillet, transfer fish and sauce to a baking dish before baking.
Leftovers keep well in the fridge for up to 2 days.
