Description

This Gluten Free Mediterranean Baked Cod is light, bright, and full of bold lemon-garlic flavor. Tender cod is seared, baked, and finished in a buttery olive oil sauce for an easy, restaurant-style dinner made at home.

For the Cod

  • 1.5 lb cod fillets (sustainably sourced if possible)

For the Coating

  • 1/2 cup gluten-free all-purpose flour (1:1 blend)

  • 1 tsp ground coriander

  • 3/4 tsp paprika

  • 3/4 tsp ground cumin

  • 3/4 tsp salt

  • 1/2 tsp black pepper

  • 1/4 tsp red pepper flakes

For the Lemon-Garlic Sauce

  • 6 tbsp fresh lemon juice

  • 5 tbsp extra virgin olive oil

  • 2 tbsp unsalted butter

  • 6 garlic cloves, finely minced

For Serving

  • 1/4 cup fresh parsley, finely chopped


Instructions

  1. Prep the Cod
    Pat cod dry with paper towels and set aside.

  2. Make the Coating
    In a bowl, mix gluten-free flour, coriander, paprika, cumin, salt, pepper, and red pepper flakes.

  3. Prepare the Sauce
    Preheat oven to 400°F. Whisk lemon juice, olive oil, and melted butter. Stir in minced garlic.

  4. Coat the Fish
    Dip cod into the lemon-garlic sauce, then dredge in the flour mixture, shaking off excess.

  5. Sear
    Heat 2 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear cod 2 minutes per side until golden.

  6. Bake
    Pour remaining sauce over the fish. Transfer skillet to oven and bake 8–10 minutes, until flaky and opaque.

  7. Finish
    Sprinkle with fresh parsley and serve with pan juices spooned over the top.

Notes

Use a gluten-free 1:1 flour blend or rice flour for best results.

Cod is done when it flakes easily with a fork—don’t overbake.

If you don’t have an oven-safe skillet, transfer fish and sauce to a baking dish before baking.

Leftovers keep well in the fridge for up to 2 days.
