  • 1.5 lbs Yukon gold or red potatoes, cut into 1-inch pieces

  • 1 cup heavy cream

  • 1 cup freshly grated Parmesan cheese

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon paprika

  • Salt and black pepper, to taste

  • 2 tablespoons olive oil (optional, for browning)

  • 2 tablespoons chopped fresh parsley (for garnish)


Instructions

  1. Prep ingredients: Cut chicken into bite-sized chunks and slice potatoes into 1-inch pieces. Mince the garlic and grate the Parmesan cheese.

  2. Optional browning: Heat olive oil in a skillet over medium-high heat. Sear chicken 2–3 minutes per side until golden.

  3. Layer in crockpot: Add chicken and potatoes to your slow cooker.

  4. Make the sauce: In a bowl, whisk heavy cream, Parmesan, garlic, Italian seasoning, paprika, salt, and black pepper.

  5. Combine: Pour the sauce over chicken and potatoes, coating everything evenly.

  6. Cook: Cover and cook on low for 6–7 hours or high for 3.5–4 hours, until chicken is tender and potatoes are soft.

  7. Serve: Stir gently, garnish with parsley, and serve warm.

Notes

For extra flavor, don’t skip the optional chicken browning step.

Sauce too thin? Remove the lid for the last 30 minutes on high or add extra Parmesan.
