Ingredients
12 oz cheese tortellini (fresh preferred, frozen okay)
2 boneless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
4 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
1 cup Parmesan cheese, freshly grated
2 cups broccoli florets
Salt, pepper, and Italian herbs to taste
Handful of fresh parsley, chopped
Instructions
Boil Tortellini: Bring a large pot of salted water to a boil. Add tortellini and cook until they float. Drain and set aside.
Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and Italian herbs. Sear until golden and cooked through. Remove and set aside.
Sauté Garlic: In the same skillet, add minced garlic and sauté until fragrant (about 30 seconds).
Make Sauce: Pour in heavy cream and chicken broth. Bring to a simmer. Stir in Parmesan cheese until smooth.
Combine: Add chicken, broccoli, and tortellini to the skillet. Toss to coat evenly in the sauce. Heat through for 2–3 minutes.
Garnish & Serve: Sprinkle with chopped parsley and serve hot.
Notes
Steam or blanch broccoli in the pasta water for convenience.
Use rotisserie chicken for a shortcut.
Add red pepper flakes for a spicy twist.
Best served fresh, but leftovers reheat well with a splash of milk.
