This Garlic Parmesan Chicken Meatloaf is the ultimate comfort food—juicy, cheesy, and packed with garlic-herb flavor. Made with lean ground chicken, gooey mozzarella, and savory Parmesan, it’s a delicious twist on a classic that’s sure to be a family favorite.
Ingredients
1½ lbs ground chicken
½ cup breadcrumbs
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese (plus extra for topping)
3 cloves garlic, minced
1 egg
¼ cup milk
1 tbsp fresh parsley, chopped
1 tsp Italian seasoning
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat oven to 375°F and lightly grease a loaf pan or line it with parchment paper.
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, garlic, egg, milk, parsley, Italian seasoning, salt, and pepper. Mix until just combined.
Press the mixture into the loaf pan, smoothing the top.
Bake for 45–50 minutes, or until internal temperature reaches 165°F.
In the last 5 minutes of baking, top with extra mozzarella and return to the oven until melted and bubbly.
Let rest for 5–10 minutes before slicing. Garnish with fresh parsley and serve.
Notes
Feel free to sub ground turkey for chicken if needed.
Mozzarella can be swapped for provolone or a blend of Italian cheeses.
Leftovers make an amazing meatloaf sandwich the next day!
