  • 8 boneless skinless chicken thighs

  • 2 tablespoons minced green onions (white part)

  • 2 tablespoons white miso paste

  • 2 tablespoons rice vinegar

  • 2 tablespoons mirin

  • 1 tablespoon honey

  • 1 tablespoon soy sauce

  • 1 tablespoon minced garlic

  • Garnish: green onions (green tops) and fresh cilantro


Instructions

  1. In a medium-sized bowl, whisk together the miso paste, rice vinegar, mirin, honey, soy sauce, garlic, and the white parts of the green onions.

  2. Add chicken thighs to the marinade and massage thoroughly to coat. Let sit for at least 10 minutes.

  3. Line your air fryer basket or tray with parchment paper or foil. Place the chicken in a single layer and spoon any extra marinade over the top.

  4. Air fry at 375°F (190°C) for 20 minutes, flipping halfway through.

  5. Optional: Broil for 2 minutes at the end to achieve a caramelized crust.

  6. Use a meat thermometer to confirm the internal temperature reaches 165°F.

  7. Baste with pan juices, garnish with chopped green onions and cilantro, and serve hot!
