Ingredients

2 boneless, skinless chicken breasts, cut into 1-inch pieces

3 tbsp unsalted butter, divided

4 cloves garlic, minced

Instructions

Pat chicken dry with paper towels and cut into 1-inch bite-sized pieces.

In a bowl, combine chicken, flour, oregano, basil, paprika, salt, and pepper. Toss to coat evenly.

Heat olive oil and 1 tbsp of butter in a large cast iron skillet over medium-high heat.

Add chicken in a single layer and cook undisturbed for 3 minutes until golden.

Flip pieces and cook another 2 minutes.

Add remaining butter, minced garlic, and parsley. Cook for 1 more minute, stirring to coat the chicken.

Notes
Don’t overcrowd the pan—cook in batches if needed for the best crispy edges.
Chicken thighs can be used for a juicier variation.
