Ingredients
2 lbs skirt steak
Salt & pepper to taste
6 tsp garlic, minced
6 tbsp butter
1/2 cup chopped parsley
1–2 tbsp olive oil for searing
Instructions
Cut the skirt steak into portions that fit your skillet. Pat dry with paper towels and season both sides with salt and pepper.
In a large skillet, heat oil over medium-high heat until hot. Sear the steak for 2–3 minutes per side for medium-rare or until desired doneness. Remove from pan and let rest.
In a separate skillet, melt butter over low heat. Add minced garlic and stir frequently until golden (about 1–2 minutes). Be careful not to burn it!
Remove garlic butter from heat and immediately transfer to a bowl to stop cooking.
Slice steak thinly against the grain. Drizzle with garlic butter, sprinkle with parsley, and serve hot.
Notes
Skirt steak cooks fast—don’t walk away from the pan!
For a smoky twist, add a pinch of smoked paprika to the garlic butter.
