Sugar Cookie Crust

  • 1 and 1/2 cups (188g) all-purpose flour (spooned & leveled)

  • 1 and 1/2 teaspoons cornstarch

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature

  • 3/4 cup (150g) granulated sugar

  • 1 large egg, at room temperature

  • 1 teaspoon pure vanilla extract

Topping

  • 8 ounces (226g) full-fat brick cream cheese, softened to room temperature

  • 3 Tablespoons (43g) unsalted butter, softened to room temperature

  • 1 and 1/4 cups (150g) confectioners’ sugar

  • 1 teaspoon pure vanilla extract

  • 3 cups (about 400g) assorted sliced fresh fruit (e.g., strawberries, kiwi, blueberries, mandarin oranges, raspberries, grapes)


Instructions

  1. Make the Crust: In a medium bowl, whisk flour, cornstarch, baking powder, and salt.

  2. In a large bowl, beat butter and granulated sugar on medium-high speed until creamy, about 2 minutes.

  3. Add the egg and vanilla extract; beat until combined.

  4. Add dry ingredients to wet ingredients; beat on low until dough forms.

  5. Cover dough and chill for at least 20 minutes (up to 1 day). Let soften slightly at room temp if chilled longer than 2 hours.

  6. Preheat oven to 350°F (177°C). Grease a 12-inch pizza pan.

  7. Press dough onto pan into a 9-10 inch circle, about 1/3-inch thick.

  8. Bake 17-19 minutes until edges are lightly golden. Cool completely.

  9. Make the Frosting: Beat cream cheese and butter together until smooth. Add confectioners’ sugar and vanilla; beat until creamy.

  10. Spread frosting over cooled crust.

  11. Top with arranged fresh fruit. Slice and enjoy!
