Ingredients
6 chicken thighs, bone-in, skin-on
1/2 cup soy sauce
1/2 cup white vinegar
4 cloves garlic, crushed
1 tablespoon black peppercorns
4 bay leaves
Instructions
In a large bowl, combine soy sauce, vinegar, garlic, peppercorns, and bay leaves. Add chicken thighs and mix well to coat.
Cover and marinate in the refrigerator for at least 4 hours, or overnight for best flavor.
Preheat oven to 375°F (190°C).
Transfer chicken and marinade into a large Dutch oven or oven-safe pot. Place chicken skin-side down.
Cover and bake for 30 minutes.
Uncover, flip the chicken skin-side up, and baste with sauce.
Continue baking uncovered for another 30 minutes until the chicken is browned and sauce is reduced to a glaze.
Serve hot with steamed rice and enjoy!
Notes
For a little sweetness, add 1 teaspoon of brown sugar to the marinade.
Want it spicy? Toss in a sliced chili or a pinch of red pepper flakes.
