Ingredients
1 ½ pounds boneless chicken thighs (or chicken breasts)
1 large onion, sliced
2–3 bell peppers, sliced (red, yellow, or orange)
8 oz cream cheese, softened
2 tablespoons fajita seasoning (homemade or store-bought)
1 ½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
Instructions
Preheat oven to 375°F.
Slice onions and bell peppers into thin strips.
Rub chicken thighs with fajita seasoning.
In a skillet over medium-high heat, sear chicken thighs until lightly golden (no need to cook through).
Layer onions and peppers at the bottom of a casserole dish.
Arrange seared chicken thighs on top.
Dot with spoonfuls of cream cheese across the dish.
Sprinkle shredded cheese over everything generously.
Bake uncovered for 25–30 minutes, until the chicken reaches 165°F and cheese is bubbly and golden.
