  • 2 tablespoons fajita seasoning (homemade or store-bought)

  • 1 ½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)


Instructions

  • Preheat oven to 375°F.

  • Slice onions and bell peppers into thin strips.

  • Rub chicken thighs with fajita seasoning.

  • In a skillet over medium-high heat, sear chicken thighs until lightly golden (no need to cook through).

  • Layer onions and peppers at the bottom of a casserole dish.

  • Arrange seared chicken thighs on top.

  • Dot with spoonfuls of cream cheese across the dish.

  • Sprinkle shredded cheese over everything generously.
