This Easy Baked Honey Dijon Chicken is a weeknight lifesaver! Tender, juicy chicken smothered in a sweet and tangy honey mustard glaze, baked to golden perfection. With minimal prep and maximum flavor, it’s a dinner everyone will request on repeat.
Ingredients
4 boneless, skinless chicken breasts or thighs
Salt and pepper, to taste
1/3 cup Dijon mustard
1/4 cup honey
2 cloves garlic, minced
1 tbsp olive oil
Fresh thyme leaves (optional, for garnish)
Instructions
Preheat your oven to 375°F (190°C).
Rinse and pat dry the chicken. Season both sides with salt and pepper.
In a small bowl, whisk together the Dijon mustard, honey, minced garlic, and olive oil until smooth.
Coat the chicken pieces in the marinade, cover, and refrigerate for at least 30 minutes.
Lightly grease a baking dish. Remove chicken from the marinade and place in the dish, letting excess drip off.
Brush the reserved honey Dijon sauce over the top of the chicken.
Bake for 25–30 minutes, or until chicken reaches an internal temp of 165°F and is golden brown.
Garnish with fresh thyme if desired, and serve with rice or salad.
Notes
Thighs offer a juicier result, but breasts work beautifully too.
Add a dash of chili flakes for a spicy kick.
Great with roasted veggies, mashed potatoes, or cauliflower rice.
