Ingredients
-
Frozen dumplings
-
1 pack instant ramen noodles
-
2 cups chicken broth
-
1 tsp soy sauce
-
1 tsp sesame oil
-
2 eggs (soft-boiled)
-
1 cup fresh spinach
-
2 tbsp sliced green onions
-
Black sesame seeds (optional)
Instructions
-
Soft-boil the eggs: Bring water to a boil, add room-temperature eggs, and cook 6–7 minutes. Transfer to ice bath and peel once cooled.
-
Prepare the broth: In a pot, heat chicken broth and season with soy sauce and sesame oil.
-
Cook the dumplings: Add frozen dumplings directly into simmering broth and cook 8–10 minutes, until they float.
-
Add noodles & spinach: Stir in ramen noodles and cook 2–3 minutes. Add spinach and let wilt for 1–2 minutes.
-
Assemble: Divide dumplings, noodles, broth, and spinach into bowls. Top with halved eggs, sliced green onions, and black sesame seeds.
Notes
-
Store noodles separately if reheating later to prevent mushiness.
-
Add chili oil for a spicy kick.
-
Substitute spinach with bok choy or kale if preferred.
