Description

This Dump and Bake Chicken Tzatziki Casserole is the ultimate weeknight dinner—creamy, comforting, and bursting with Mediterranean flavors. Made with juicy chicken, fluffy rice, and a tangy tzatziki sauce, it’s a one-dish wonder that goes from oven to table with minimal effort and maximum taste

Ingredients

Scale
  • 1 cup long-grain white rice

  • 1 ½ cups low-sodium chicken broth

  • 1 ½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried oregano

  • ½ tsp paprika

  • 1 cup tzatziki sauce (store-bought or homemade)

  • ½ cup crumbled feta cheese

  • ½ cup chopped fresh parsley or dill (for garnish)

  • 1 medium cucumber, thinly sliced (optional, for garnish)

Instructions

  1. Preheat Oven: Set oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

  2. Prepare Base: Spread uncooked rice evenly in the dish. Pour in chicken broth to fully submerge the rice.

  3. Add Chicken: Layer chicken pieces over rice. Sprinkle with garlic powder, onion powder, oregano, and paprika.

  4. Add Tzatziki: Spoon tzatziki sauce over the chicken and gently spread to coat.

  5. Bake Covered: Cover tightly with foil and bake for 35–40 minutes, until chicken is cooked and rice is tender.

  6. Optional Uncovering: If excess liquid remains, uncover and bake for an additional 5–10 minutes.

  7. Garnish and Serve: Let rest for 5 minutes. Top with feta, parsley or dill, and cucumber slices before serving.

Notes

  • You can substitute chicken thighs for breasts if desired—just trim excess fat.

  • For extra flavor, mix some lemon zest into the tzatziki before baking.

  • Leftovers? Reheat with a splash of broth or water to keep the rice moist.

  • Use homemade tzatziki if you prefer a more personalized touch!
