Ingredients
1 ½ pounds chicken breasts
Salt & pepper, to taste
1 ½ cups BBQ sauce
1 teaspoon soy sauce
1 teaspoon garlic, minced
1–2 cans pineapple chunks (1 can for cooking, 1 optional for topping)
Cooked rice, for serving (optional)
Optional garnish: chopped green onions
Instructions
Place chicken breasts at the bottom of the slow cooker. Season lightly with salt and pepper.
In a small bowl, whisk together the BBQ sauce, soy sauce, and minced garlic.
Pour the sauce mixture over the chicken.
Add 1 can of pineapple chunks (including the juice) on top.
Cover and cook on low for 6–8 hours or high for 4–6 hours, until the chicken is tender.
Shred the chicken directly in the crockpot using two forks.
Serve over rice and top with extra pineapple chunks and green onions if desired.

Frozen chicken breasts can be used; just add 1 hour to the cook time.
