-
4 cups fresh broccoli florets, chopped
-
1 medium yellow onion, finely diced
-
3 cloves garlic, minced
-
4 cups chicken broth (low-sodium optional)
-
2 cups sharp cheddar cheese, shredded
-
1 cup heavy cream
-
2 tablespoons cornstarch + splash of water (for slurry)
-
1 teaspoon salt
-
1/2 teaspoon black pepper
-
1/2 teaspoon paprika
Instructions
-
Prep: Add diced chicken, broccoli, onion, and garlic to your slow cooker.
-
Season: Pour in chicken broth and stir in salt, pepper, and paprika.
-
Cook: Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is tender.
-
Thicken: In the last 30 minutes, stir in the cornstarch slurry.
-
Finish: Add the heavy cream and shredded cheddar, stirring slowly until smooth and creamy.
-
Serve: Taste and adjust seasoning if needed, then ladle into bowls and enjoy!
Notes
For extra creaminess, shred your own cheese — it melts better than pre-shredded.
Add frozen broccoli during the last hour of cooking to prevent mushiness.
To lighten it up, swap heavy cream for half-and-half.
Leftovers reheat beautifully on the stovetop at low heat.
