1 bell pepper, sliced

12 oz penne pasta

Instructions

In a bowl, drizzle chicken breasts with olive oil and season with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub to coat evenly.

Sear chicken in a hot skillet for 2–3 minutes per side to develop flavor.

Transfer chicken to the slow cooker. Top with bell peppers, onions, and garlic.

Pour in diced tomatoes and chicken broth. Cover and cook on low for 4–5 hours or high for 2–3 hours.

Remove chicken, shred it with forks, then return it to the slow cooker.
