1 lb boneless, skinless chicken breasts (cut into strips)

3 tbsp Dijon mustard

2 tbsp honey

1 cup breadcrumbs (panko or regular)

1 tsp onion powder

1 tsp paprika

½ tsp salt

½ tsp black pepper

½ cup all-purpose flour

2 eggs (beaten)

Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment or lightly spray with oil.

Whisk together Dijon mustard and honey in a small bowl.

In another dish, mix breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.

Prepare three bowls: one with flour, one with beaten eggs, and one with the breadcrumb mixture.

Dip each chicken strip in flour, then egg, then breadcrumbs, pressing to coat.

Arrange coated strips on the baking sheet and spray lightly with oil.

Bake 15–20 minutes, flipping halfway, until golden brown and cooked through (165°F internal temperature).

Notes
For extra spice, add a pinch of cayenne to the breadcrumb mix.
Gluten-free breadcrumbs work well as a substitute.
