Golden, crispy, and savory — these Chicken and Potato Doughnuts are the perfect comfort food snack! Crunchy outside, cheesy and tender inside.
Ingredients
2 cups mashed potatoes (cold or leftover)
1 cup cooked shredded chicken
1/2 cup grated cheddar cheese
1/4 cup chopped green onions
1 egg
1/2 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
1/2 cup all-purpose flour (for coating)
1 cup breadcrumbs (preferably panko)
Oil for frying
Instructions
In a large bowl, mix mashed potatoes, chicken, cheese, egg, green onions, and seasonings.
Shape into doughnut rings using hands or a cutter.
Coat each doughnut in flour, then breadcrumbs.
Heat oil in a deep pan over medium heat.
Fry doughnuts until golden brown and crisp on all sides.
Drain on paper towels and serve hot with your favorite dip.
Notes
Chill the mixture before shaping to make it easier to handle.
You can bake instead of fry for a lighter version (400°F for 20–25 mins).
Perfect for using up leftover mashed potatoes or rotisserie chicken.
