Description

Creamy Tuscan Chicken is a rich, one-skillet dinner packed with bold Italian flavors. Juicy chicken breasts are simmered in a velvety garlic-Parmesan cream sauce with spinach and cherry tomatoes. It’s a quick and comforting meal perfect for busy weeknights or cozy dinners in!

Ingredients

Scale
  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 1 teaspoon Italian seasoning

  • Salt and pepper, to taste

  • 3 cloves garlic, minced

  • 1 cup cherry tomatoes, halved

  • 1 cup fresh spinach

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • ¼ cup fresh basil, chopped

  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Season chicken breasts with Italian seasoning, salt, and pepper.

  3. Sear chicken for 6–7 minutes on each side, or until golden brown and cooked through. Remove and set aside.

  4. In the same skillet, add minced garlic and cook for 1 minute until fragrant.

  5. Add cherry tomatoes and cook for 2–3 minutes until softened.

  6. Stir in spinach and cook until wilted.

  7. Reduce heat to medium-low, pour in heavy cream, and stir.

  8. Add Parmesan cheese and stir until sauce is smooth.

  9. Return chicken to the skillet, spoon sauce over top, and simmer for 3–5 minutes.

  10. Finish with lemon juice and sprinkle with fresh basil before serving.

Notes

  • Freshly grated Parmesan melts best and makes the sauce extra creamy.

  • For extra flavor, try adding sun-dried tomatoes or a pinch of crushed red pepper.

  • Delicious over pasta, rice, or with crusty bread for dipping.
