For the Soup Base

  • 1 tablespoon olive oil

  • 1 pound lean ground beef or ground turkey

  • 1 small yellow onion, finely diced

  • 3 garlic cloves, minced

  • 1 teaspoon Italian seasoning

  • ½ teaspoon crushed red pepper flakes (optional)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 (24-ounce) jar marinara sauce

  • 4 cups low-sodium chicken broth

  • 1 (15-ounce) can crushed tomatoes

  • 8 lasagna noodles, broken into pieces

For the Creamy Touch

  • ½ cup heavy cream

  • ½ cup ricotta cheese

  • 1 cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

For Garnish

  • Fresh basil or parsley, chopped

  • Extra Parmesan


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add the ground beef or turkey and cook until browned, breaking it apart as it cooks. Drain excess fat, leaving about one tablespoon in the pot.

  2. Add the diced onion and sauté for 3–4 minutes until softened. Stir in the garlic and cook for 30 seconds.

  3. Sprinkle in Italian seasoning, crushed red pepper flakes, salt, and pepper. Stir to coat the meat and onions.

  4. Pour in the marinara sauce, chicken broth, and crushed tomatoes. Stir and bring to a gentle boil.

  5. Reduce heat and simmer uncovered for 15–20 minutes to develop flavor.

  6. Add broken lasagna noodles directly into the soup. Cook for 10–12 minutes, stirring occasionally to prevent sticking.

  7. Lower heat and stir in heavy cream, ricotta, mozzarella, and Parmesan until melted and creamy.

  8. Garnish with fresh basil or parsley and extra Parmesan. Serve warm.

Notes

  • If your soup thickens while sitting, add extra broth to loosen it.

  • Swap lasagna noodles for any pasta you have on hand.

  • For a lighter version, use turkey and half-and-half instead of heavy cream.

  • Store leftovers in the fridge for up to 3 days—add broth when reheating.
