Ingredients
3–4 boneless, skinless chicken breasts (diced)
1 package fresh or frozen gnocchi
8 oz cream cheese (full-fat)
2 cups low-sodium chicken broth
2 cups fresh spinach
1 cup shredded cheddar cheese
½ cup crispy bacon bits
1 tsp garlic powder
1 tsp onion powder
1–2 tbsp oil
Instructions
Prepare Ingredients: Dice chicken, shred cheddar, and gather all ingredients for easy cooking.
Sauté Chicken: Heat oil in a large skillet over medium-high heat. Cook chicken for 5–7 minutes until golden and cooked through.
Make Sauce: Reduce heat to medium-low. Add cream cheese and chicken broth, stirring until smooth and creamy.
Add Gnocchi & Spinach: Stir in gnocchi and spinach. Cover and simmer 5–7 minutes until gnocchi is tender.
Add Cheese & Bacon: Stir in shredded cheddar and bacon until melted and gooey.
Serve: Ladle into bowls and garnish with extra cheese or herbs if desired.
Notes
Use rotisserie chicken for a quick shortcut.
Add smoked paprika or red pepper flakes for extra flavor.
Leftovers keep for 3 days in the fridge—add a splash of broth when reheating.
