Ingredients
- 8 oz (225g) spaghetti
- 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
- 2 cups heavy cream
- 1 cup grated Parmesan cheese (plus extra for garnish)
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 tsp dried oregano
- 1 tsp smoked paprika (optional)
- Salt and pepper to taste
- Fresh parsley or basil for garnish
Instructions
- Prepare the Chicken : Season chicken pieces with salt, pepper, and spices. Heat olive oil in a skillet over medium-high heat, add chicken, and cook until golden brown on all sides. Remove and set aside.
- Cook the Spaghetti : Boil salted water in a pot, add spaghetti, and cook according to package instructions. Drain and toss with olive oil to prevent sticking. Reserve ½ cup of pasta water.
- Create the Sauce : In the same skillet, melt butter, sauté onions and garlic until fragrant, then pour in heavy cream. Simmer gently and stir in Parmesan cheese, oregano, and paprika. Adjust seasoning.
- Combine Everything : Add cooked spaghetti and chicken back to the skillet. Toss together, adding reserved pasta water if needed. Cook for another minute to meld flavors. Garnish with fresh herbs before serving.
