Description

Ingredients

  • 23 cups cooked and shredded chicken (breasts or thighs)

  • 4 cups fresh spinach (or 1 package frozen, thawed and drained)

  • 8 oz cream cheese, softened

  • ½ cup sour cream

  • 1 cup mozzarella cheese, shredded

  • ¼ cup Parmesan cheese, grated

  • 2 cloves garlic, minced

  • 1 small onion, finely chopped

  • Salt and pepper, to taste

  • Pinch of nutmeg

  • Optional: sliced mushrooms, artichoke hearts, or cooked pasta


Instructions

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.

  2. Cook and shred chicken if not pre-cooked.

  3. If using fresh spinach, sauté until wilted; if frozen, thaw and drain well.

  4. In a mixing bowl, combine cream cheese, sour cream, garlic, onion, salt, pepper, and nutmeg until smooth.

  5. Layer chicken, spinach, and the creamy mixture in the casserole dish. Stir gently to combine.

  6. Sprinkle mozzarella and Parmesan evenly on top.

  7. Bake uncovered for 25–30 minutes, until golden and bubbly.

  8. Let rest 5 minutes before serving.

Notes

Rotisserie chicken is a great shortcut.
Swap mozzarella with cheddar or Gruyère for a flavor twist.
