Ingredients
4 boneless, skinless chicken breasts
Salt and pepper, to taste
4 ounces cream cheese, softened
½ cup shredded cheddar cheese
4 slices bacon, cooked and crumbled
1 cup crushed Doritos chips (Nacho Cheese flavor)
2 eggs, beaten
1 tablespoon olive oil
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
Butterfly each chicken breast by slicing a pocket into the side—don’t cut all the way through.
Season the inside of each chicken breast with salt and pepper.
In a bowl, mix the softened cream cheese, cheddar cheese, and crumbled bacon.
Stuff the cheese mixture into each chicken pocket and press to seal.
Dip the stuffed chicken breasts into the beaten eggs, then coat with crushed Doritos, pressing gently so it sticks.
Place the coated chicken in the greased baking dish.
Bake for 25–30 minutes, or until chicken is fully cooked (internal temp 165°F) and coating is crisp and golden.
Let rest for 5 minutes before serving.
Notes
For extra crunch, sprinkle more crushed Doritos on top before baking.
Spice lovers can mix in jalapeños or use spicy Doritos for added heat.
Air fryer option: Cook at 375°F for 18–20 minutes, flipping halfway.
