Ingredients
6 large russet potatoes
1 lb chicken breast (or thighs)
½ packet ranch seasoning mix (or 1 tbsp)
8 oz cream cheese (full-fat preferred)
4–6 slices bacon, cooked and crumbled
1½ cups cheddar cheese, shredded
Olive oil, salt & pepper (for potato skins)
Optional garnishes: chopped chives or green onion, extra bacon, ranch drizzle, blue cheese crumbles
Instructions
Cook the Crack Chicken:
Add raw chicken, cream cheese, and ranch seasoning to a 4–5 qt slow cooker.
Cook on HIGH for 2–3 hours until the chicken is tender.
Shred the chicken directly in the pot and stir in shredded cheddar and crumbled bacon.
Bake the Potatoes:
Preheat oven to 400°F.
Scrub and dry the potatoes. Rub with olive oil, salt, and pepper.
Bake directly on the rack for 45–60 minutes until soft and crispy-skinned.
Microwave option: Poke with a fork and microwave 3–12 minutes depending on size.
Assemble and Broil:
Slice open baked potatoes and fluff the insides with a fork.
Spoon in generous amounts of crack chicken filling.
Top with more cheese and bacon; broil for 2–4 minutes until melted.
Garnish and Serve:
Add chives, ranch drizzle, or blue cheese on top for extra flavor.
