Description

These Crack Chicken Stuffed Baked Potatoes are loaded with creamy ranch-seasoned chicken, crispy bacon, melty cheddar, and fresh chives—comfort food at its best. A hearty, family-friendly dinner that’s easy to prep and irresistibly satisfying!

Ingredients

Scale
  • 6 large russet potatoes

  • 1 lb chicken breast (or thighs)

  • ½ packet ranch seasoning mix (or 1 tbsp)

  • 8 oz cream cheese (full-fat preferred)

  • 46 slices bacon, cooked and crumbled

  • 1½ cups cheddar cheese, shredded

  • Olive oil, salt & pepper (for potato skins)

  • Optional garnishes: chopped chives or green onion, extra bacon, ranch drizzle, blue cheese crumbles

Instructions

  1. Cook the Crack Chicken:

    • Add raw chicken, cream cheese, and ranch seasoning to a 4–5 qt slow cooker.

    • Cook on HIGH for 2–3 hours until the chicken is tender.

    • Shred the chicken directly in the pot and stir in shredded cheddar and crumbled bacon.

  2. Bake the Potatoes:

    • Preheat oven to 400°F.

    • Scrub and dry the potatoes. Rub with olive oil, salt, and pepper.

    • Bake directly on the rack for 45–60 minutes until soft and crispy-skinned.

    • Microwave option: Poke with a fork and microwave 3–12 minutes depending on size.

  3. Assemble and Broil:

    • Slice open baked potatoes and fluff the insides with a fork.

    • Spoon in generous amounts of crack chicken filling.

    • Top with more cheese and bacon; broil for 2–4 minutes until melted.

  4. Garnish and Serve:

    • Add chives, ranch drizzle, or blue cheese on top for extra flavor.

Notes

Time-saver tip: Use shredded rotisserie chicken and mix filling in a pan for faster prep.
Double the filling: It’s freezer-friendly and great in sandwiches, wraps, or quesadillas.
Low-carb option: Skip the potato and serve the filling over cauliflower or in lettuce cups.
