-
½ lb frozen chicken nuggets

1 tablespoon cooking oil
-
⅓ cup diced red bell peppers
-
⅓ cup diced onions

1 cup pineapple chunks
-
⅓ cup Thai sweet chili sauce (such as Mae Ploy)
-
2–3 tablespoons pineapple juice

Steamed white rice, for serving
Instructions
-

-
While the nuggets bake, heat oil in a skillet over medium-high heat.

Add the red bell peppers, onions, and pineapple chunks. Cook for about 2 minutes, stirring occasionally.
-
Stir in the Thai sweet chili sauce and pineapple juice. Let the mixture come to a boil.
-
Add the baked chicken nuggets to the skillet and toss to coat in the sauce.
-
Heat through for another 1–2 minutes, then serve hot over steamed white rice.
Notes
-
Want extra kick? Add a dash of sriracha or red pepper flakes to the sauce.
-
Using canned pineapple? Save the juice to add extra sweetness to your sauce.
-
Swap chicken nuggets with air-fried or homemade chicken chunks for a fresher option.
-
Great for meal prep—just keep the sauce and nuggets separate until ready to reheat!
