Description

These Cinnamon Apple Cottage Cheese Bites are the ultimate high-protein snack, perfect for any time of the day. Packed with the goodness of cottage cheese, rolled oats, and fresh apples, these delicious bites are lightly sweetened with honey or maple syrup and flavored with warm cinnamon. Topped with shredded coconut and a drizzle of caramel, they’re as satisfying as they are healthy!


Ingredients

  • 1 cup cottage cheese

  • 1 cup rolled oats

  • 1/2 cup applesauce or 1 small grated apple

  • 1 large egg

  • 1/2 tsp cinnamon

  • 1 tbsp honey or maple syrup (optional, for added sweetness)

  • 1/2 tsp baking powder

  • Pinch of salt

  • 1/4 cup shredded coconut (for topping)

  • 12 tbsp caramel sauce (for drizzle)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.

  2. In a mixing bowl, combine the cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Stir until well mixed.

  3. Let the batter sit for 5 minutes to allow the oats to absorb some moisture.

  4. Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.

  5. Bake for 18-20 minutes, or until the bites are set and lightly golden on top.

  6. Let the bites cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.

  7. Once cooled, top with shredded coconut and drizzle with caramel sauce before serving.

Notes

Feel free to adjust the sweetness to your liking by adding more honey or maple syrup.
For extra texture, try adding chopped nuts or raisins to the batter.
These bites can be stored in an airtight container in the fridge for up to 4 days.
