These Cilantro Lime Chicken Thighs are bursting with bright, zesty flavor and a hint of smoky spice. Marinated in fresh lime juice, cilantro, and spices, then grilled to juicy perfection—this easy dinner is a surefire win for busy weeknights or backyard gatherings.
Ingredients
¼ cup chopped fresh cilantro leaves
3 tablespoons extra virgin olive oil, divided
2 tablespoons freshly squeezed lime juice
1 tablespoon lime zest
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 pounds boneless, skinless chicken thighs
Instructions
In a medium bowl, whisk together cilantro, 2 tablespoons olive oil, lime juice, lime zest, chili powder, cumin, salt, and pepper.
Add chicken thighs to a large Ziploc bag or bowl, pour in the marinade, seal, and mix until well coated. Marinate for at least 2 hours or overnight in the refrigerator.
Drain chicken from marinade.
Heat the remaining tablespoon of olive oil in a cast iron grill pan over medium-high heat.
Working in batches, add chicken in a single layer. Cook for 4–5 minutes per side, or until golden brown and internal temperature reaches 165°F.
Serve immediately, garnished with extra cilantro and lime wedges if desired.
Notes
You can substitute chicken breasts, but adjust cooking time to avoid drying out.
Marinate overnight for the best flavor.
No grill pan? Use a skillet or outdoor grill instead.
