For the Cake

6 cups powdered sugar (sifted)

1/4 tsp ground nutmeg
Instructions

Preheat oven to 325°F. Grease and flour two 8-inch round cake pans.

In a bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.

In another bowl, whisk eggnog, milk, oil, vanilla bean paste, rum flavoring, and eggs.

Add softened butter to the dry mixture and beat until sandy and crumbly.

Pour in one-third of the liquid mixture and mix for 30 seconds. Add remaining liquid and mix until combined. Avoid overmixing.

Divide batter evenly between pans and bake 50–55 minutes, until a toothpick comes out with soft crumbs. Cool completely.

For the buttercream: beat butter until fluffy. Add 3 cups powdered sugar; mix low then medium. Add 2 tbsp milk and remaining sugar. Add remaining milk, vanilla, rum flavoring, nutmeg, and salt. Beat until creamy and smooth.

Frost cooled cake layers, then frost the top and sides. Dust with cinnamon or nutmeg if desired. Enjoy!
