These Christmas Gooey Butter Cookies are soft, buttery, and melt-in-your-mouth delicious! Made with cream cheese, yellow cake mix, and festive sprinkles, they’re the perfect easy holiday cookie for parties, cookie exchanges, or a cozy night in.
Ingredients
-
8 ounces full-fat cream cheese, softened
-
1/2 cup unsalted butter, softened
-
1 large egg
-
1 teaspoon vanilla extract
-
1 (15.25-ounce) box of yellow cake mix
-
1/2 cup holiday sprinkles (red and green)
-
1/2 cup powdered sugar
Instructions
-
Preheat oven: Set your oven to 350°F (175°C). Line two baking sheets with parchment paper.
-
Mix wet ingredients: In a large bowl, beat the softened cream cheese, butter, egg, and vanilla extract together until smooth and creamy.
-
Add cake mix: Stir in the yellow cake mix until a thick dough forms.
-
Add sprinkles: Gently fold in the holiday sprinkles, being careful not to overmix.
-
Chill dough: Refrigerate for at least 30 minutes to make the dough easier to handle.
-
Form cookies: Scoop 1½-inch dough balls and roll them in powdered sugar until fully coated.
-
Bake: Place the cookie dough balls on prepared baking sheets, about 2 inches apart. Bake for 10–12 minutes, until edges are set but centers are still soft.
-
Cool: Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
For extra holiday flair, use different sprinkle colors for various celebrations.
If your dough feels too sticky, chill it a little longer before rolling.
These cookies freeze beautifully—store in an airtight container for up to 3 months.
