Instructions

Prepare the crust: Fit your chilled pie crust into a 9-inch pie dish. Blind-bake at 375°F (190°C) for 15 minutes. Remove weights and bake 5 more minutes until lightly golden.

Warm the cream: Heat milk, cream, cinnamon, and vanilla in a saucepan until steaming (do not boil).

Whisk eggs & sugar: In a bowl, whisk eggs and sugar until smooth. Temper by slowly adding a small amount of warm cream mixture, then whisk in the rest.

Strain: Pour the mixture through a fine strainer for a silky texture.

Fill & bake: Pour custard into the crust. Bake at 325°F (160°C) for 35–40 minutes until edges are set but center slightly jiggles.

Cool: Allow to cool, then chill at least 2 hours before slicing.
