Description

For the Chicken Schnitzel:

  • 2 large boneless, skinless chicken breasts (butterflied and pounded to 1/4-inch thickness)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Sandwich:

  • 4 sandwich rolls, ciabatta buns, or crusty bread
  • 4 lettuce leaves (romaine or iceberg)
  • 1 large tomato, sliced

Instructions

Prepare the Chicken Schnitzel:

  1. Set Up Breading Station:

    • Place flour on one plate.
    • Beat eggs in a shallow bowl.
    • Combine breadcrumbs, garlic powder, paprika, salt, and pepper on another plate.
  2. Bread the Chicken:
    Coat each chicken piece in flour, shaking off the excess. Dip into the beaten eggs, then coat in the breadcrumb mixture, pressing gently to adhere.

  3. Cook the Schnitzel:
    Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. Fry the chicken schnitzel for 3-4 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/74°C). Remove and drain on a paper towel-lined plate.

Prepare the Sauce:

  1. In a small bowl, mix mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Adjust seasoning as desired.

Assemble the Sandwiches:

  1. Spread a layer of sauce on the bottom half of each sandwich roll.
