For the Chicken Sausages:

  • 4 chicken sausages

  • 2 tablespoons olive oil

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

For the Pasta:

  • 8 ounces pasta (penne, rigatoni, or your favorite shape)

  • 2 tablespoons olive oil

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 2 zucchinis, sliced

  • 2 cups cherry tomatoes, halved

  • 1 cup chicken broth

  • 1 teaspoon dried basil

  • Salt and pepper to taste

  • Grated Parmesan cheese, for serving


Instructions

  1. Marinate the Sausages: In a bowl, mix olive oil, paprika, garlic powder, oregano, salt, and pepper. Toss the chicken sausages until well coated. Set aside.

  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and set aside.

  3. Sear the Sausages: Heat a large skillet over medium-high heat. Sear sausages for 4–5 minutes per side until browned. Remove and set aside.

  4. Sauté the Veggies: In the same skillet, add olive oil, diced onion, and garlic. Cook until translucent, about 2–3 minutes.

  5. Add zucchini and cherry tomatoes; cook for 5 more minutes, stirring occasionally, until veggies are tender.

  6. Combine & Simmer: Return sausages to skillet. Add pasta, chicken broth, basil, salt, and pepper. Stir to combine. Let simmer over low heat for 5–10 minutes to meld flavors.

  7. Serve: Garnish with grated Parmesan and fresh herbs if desired. Serve hot and enjoy!

Swap cherry tomatoes for canned diced tomatoes in a pinch (just drain first).
