Description

Ingredients

  • ½ cup mayonnaise

  • 1 tbsp rice vinegar (or apple cider vinegar)

  • 1 tsp Dijon mustard

  • 1 tbsp maple syrup (or honey or brown sugar)

  • Salt and pepper, to taste

  • 3 cups shredded cooked chicken (rotisserie recommended)

  • 1 cup seedless grapes, quartered

  • 2 celery ribs, chopped

  • ½ cup walnuts, chopped and toasted (or pecans)

  • 2 tbsp fresh parsley, chopped

  • 2 green onions, chopped


Instructions

  1. In a large bowl, whisk together the mayonnaise, vinegar, Dijon mustard, maple syrup, salt, and pepper.

  2. Add shredded chicken, grapes, celery, toasted walnuts, parsley, and green onion to the bowl.

  3. Gently stir until everything is evenly coated in the dressing.

  4. Cover and refrigerate for 20 to 30 minutes to let the flavors meld.

  5. Serve chilled, garnished with additional parsley or green onion. Enjoy in a sandwich, croissant, lettuce wrap, or with crackers!
