Description

This creamy Chicken Riesling is the perfect balance of comfort and elegance. Tender chicken breasts are simmered with crispy bacon, sautéed mushrooms, and a touch of Riesling wine, then finished in a luscious cream sauce. Served with buttery parmesan spaghetti, it’s a cozy yet restaurant-worthy meal.

Chicken Riesling:

  • 56 strips bacon, cut into small pieces

  • 2 large chicken breasts, sliced in half lengthwise

  • 1/2 tsp garlic powder

  • Salt & pepper to taste

  • Flour (for dredging)

  • 2 tbsp butter

  • 7 oz cremini mushrooms, sliced

  • 1/4 tsp Italian seasoning

  • 3 cloves garlic, minced

  • 1/2 cup Riesling wine

  • 3/4 cup heavy/whipping cream

Buttered Parmesan Pasta (optional):

  • 8 oz uncooked spaghetti

  • 2 tbsp butter

  • 1/2 cup freshly grated parmesan cheese


Instructions

  1. Cook the Pasta (if using): Boil a large salted pot of water and cook spaghetti until al dente. Drain, return to pot, and toss with butter and parmesan. Cover to keep warm.

  2. Fry the Bacon: In a large skillet over medium-high heat, cook the bacon pieces until crispy. Transfer to a paper towel-lined plate. Reserve 2–3 tablespoons of bacon fat in the skillet.

  3. Prep and Cook the Chicken: Season chicken with garlic powder, salt, and pepper, then lightly dredge in flour. In the hot skillet, sear chicken on both sides for 4–5 minutes until golden. Set aside.

  4. Sauté the Mushrooms: Add butter, mushrooms, and Italian seasoning to the skillet. Cook for 5–6 minutes until mushrooms are browned and their moisture has evaporated. Stir in garlic and cook for 1 more minute.

  5. Deglaze with Wine: Pour in the Riesling and scrape up any browned bits. Simmer until reduced by half, about 2–3 minutes.

  6. Make It Creamy: Stir in the heavy cream. Return the chicken and bacon to the skillet. Simmer for about 5 minutes until chicken is cooked through and the sauce thickens.

  7. Serve: Spoon the sauce over the chicken. Serve hot over pasta or with a side of your choice.

Notes

Riesling adds a slight sweetness—use a dry Riesling for a more balanced sauce.
You can substitute cremini mushrooms with white button mushrooms if preferred.
Great with mashed potatoes or crusty bread instead of pasta.
Store leftovers in an airtight container for up to 3 days.
