  • 2 large chicken breasts – cut into bite-sized pieces

  • 3 cups potatoes – peeled and cubed (white or Yukon gold)

  • 2 cups broccoli florets (fresh or thawed if frozen)

  • 2 garlic cloves – minced (or 1 tsp garlic powder)

  • ½ cup sour cream (or Greek yogurt)

  • ⅓ cup mayonnaise

  • 1 tsp fine sea salt

  • ½ tsp black pepper

  • 1 cup shredded cheese (cheddar, marble, parmesan, or a blend)

  • Olive oil or butter (for greasing dish and roasting potatoes)


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a casserole dish with olive oil or butter.

  2. Line a baking sheet with parchment. Cube the potatoes, drizzle with olive oil, and spread them evenly on the sheet. Roast for 20 minutes, flipping halfway through.

  3. While potatoes roast, cut the chicken into bite-sized pieces and season with salt and pepper in a large mixing bowl.

  4. Add minced garlic, roasted potatoes, and broccoli to the bowl. Stir to combine.

  5. Mix in sour cream and mayonnaise until everything is well coated.

  6. Transfer the mixture to your prepared casserole dish and spread it out evenly.

  7. Top with shredded cheese.

  8. Bake uncovered for 45 minutes, or until the top is golden and the chicken is fully cooked.

Notes

You can substitute cauliflower for broccoli if preferred.
