This Chicken Pomodoro is a quick and flavorful one-skillet dinner made with golden-seared chicken cutlets simmered in a fresh cherry tomato, garlic, onion, and lemon sauce. It’s bright, juicy, and perfect for busy weeknights when you want something comforting but still light.

For the Chicken:
- 2 pounds chicken breast cutlets
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
For the Sauce:
- ½ onion, chopped
- 4 garlic cloves, minced
- 1 cup cherry tomatoes, halved
- ½ cup chicken broth
- 2 tablespoons lemon juice
- Additional salt and pepper, to taste
- Fresh parsley (optional, for garnish)
Instructions
- Pat the chicken cutlets dry with paper towels. Season evenly with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook about 2 minutes per side until lightly golden. Remove from skillet and set aside (chicken will finish cooking later).
- Reduce heat to medium. Add chopped onion and minced garlic to the same skillet. Cook for about 5 minutes until softened and fragrant.
- Stir in cherry tomatoes, chicken broth, and lemon juice. Simmer for 5 minutes, allowing tomatoes to soften and release their juices.
- Return chicken to the skillet. Cover and cook for about 8 minutes, or until chicken is fully cooked through (internal temperature reaches 165°F).
- Taste sauce and adjust seasoning with additional salt and pepper if needed. Garnish with fresh parsley and serve warm.

- Thin cutlets cook faster and stay juicier.
- If using thicker chicken breasts, adjust cooking time accordingly.
- For extra sauce, add an additional ¼ cup chicken broth.
