Description

These Chicken Pinwheels are a quick, crowd-pleasing appetizer or snack. Filled with tender chicken, creamy cheese, and flavorful spices, they’re perfect for parties, game days, or an easy lunch. Whip them up in minutes and watch them disappear just as quickly!

Ingredients

Scale

For the filling:

  • 2 cups cooked, shredded chicken
  • 8 oz (1 package) cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste

For assembly:

  • 4 large flour tortillas (10-inch works best)

Instructions

  1. Prepare the filling: In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, green onions, cilantro (if using), garlic powder, paprika, cumin, salt, and pepper. Mix until well combined and creamy.
  2. Assemble the pinwheels: Lay out one tortilla on a flat surface. Spread an even layer of the chicken filling across the entire tortilla, reaching the edges.
  3. Roll and chill: Tightly roll up the tortilla, starting from one end. Wrap the roll in plastic wrap and place it in the refrigerator for at least 30 minutes to firm up. This step makes slicing easier.
  4. Slice and serve: Once chilled, remove the plastic wrap and use a sharp knife to slice the rolled tortilla into 1-inch thick pinwheels. Arrange on a platter and serve immediately.

Notes

  • Add extra veggies like diced bell peppers or shredded carrots for more crunch.
  • Swap the cheddar cheese for pepper jack if you want a spicy kick.
  • These can be made up to 24 hours in advance; store in an airtight container in the fridge until ready to serve.
