  • Author: Aneta
  • Total Time: 40 mins
  • Yield: 2 sandwiches 1x

Description

A Chicken Parmesan Sandwich is the perfect fusion of crispy, golden chicken, tangy marinara, and gooey melted mozzarella cheese, all tucked into a toasted Italian roll. It’s a hearty and comforting meal, ideal for weeknight dinners or game-day snacks.

Ingredients

Scale

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 3/4 cup seasoned breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • Olive oil, for frying

For the Sandwich:

  • 2 Italian rolls or ciabatta buns, split
  • 1 cup marinara sauce, warmed
  • 4 slices mozzarella cheese
  • 2 tablespoons unsalted butter, softened
  • 1 clove garlic, minced
  • Fresh basil leaves, for garnish

Instructions

  • Prepare the Chicken:

    • Place each chicken breast between sheets of plastic wrap and pound to an even 1/2-inch thickness using a meat mallet. Season both sides with salt and pepper.
  • Breading Station:

    • Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, grated Parmesan, garlic powder, and Italian seasoning.
  • Bread the Chicken:

    • Dredge each chicken breast in flour, shaking off excess. Dip into beaten eggs, allowing excess to drip off, then coat thoroughly with the breadcrumb mixture, pressing gently to adhere.
  • Fry the Chicken:

    • In a large skillet, heat about 1/4 inch of olive oil over medium heat. Once shimmering, add the breaded chicken breasts. Fry for 4-5 minutes per side until golden brown and cooked through. Transfer to a paper towel-lined plate to drain.
  • Prepare the Rolls:

    • In a small bowl, combine softened butter and minced garlic. Spread the garlic butter on the cut sides of the rolls. Toast the rolls under the broiler for 1-2 minutes until lightly golden.
  • Assemble the Sandwiches:

    • Place a chicken breast on the bottom half of each roll. Spoon warm marinara sauce over the chicken, then top with two slices of mozzarella cheese.
  • Melt the Cheese:

    • Place the assembled sandwiches on a baking sheet and broil for 2-3 minutes until the cheese is melted and bubbly.
  • Serve:

    • Garnish with fresh basil leaves, close the sandwiches with the top halves of the rolls, and serve immediately.
