Description

Ingredients

  • 2 tbsp paprika (preferably Hungarian)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 medium potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream (or sour cream for a tangier flavor)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 bay leaf
  • Fresh parsley for garnish

Instructions

  • Sauté the Chicken: Heat olive oil in a large pot over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned on all sides, about 6-8 minutes. Remove the chicken from the pot and set aside.
  • Sauté Vegetables: In the same pot, add diced onions, garlic, and bell peppers. Cook for 4-5 minutes until softened.
  • Add Paprika: Stir in the paprika and cook for 1-2 minutes, until fragrant.
  • Simmer the Soup: Add the diced potatoes, chicken broth, and bay leaf. Bring to a boil, then reduce the heat to a simmer. Cook for 15-20 minutes, until potatoes are tender.
  • Finish the Soup: Add the cooked chicken back into the pot. Stir in the heavy cream (or sour cream) and let the soup simmer for an additional 5 minutes, allowing the flavors to meld.
  • Serve: Remove the bay leaf. Ladle the soup into bowls and garnish with fresh parsley. Serve hot with crusty bread if desired.

  • If you prefer a spicier kick, you can add a pinch of cayenne pepper or red pepper flakes.
  • You can substitute chicken thighs for a richer flavor, or use bone-in chicken for added depth.
