Instructions

  • Prepare the chicken filling:

    • Heat the olive oil in a skillet over medium heat. Add the chopped onion, bell pepper, and garlic. Sauté for 2–3 minutes until softened and fragrant.
    • Add the shredded chicken, paprika, salt, and pepper. Cook for another 2 minutes until the chicken is warmed through. Remove from heat and set aside.
  • Prepare the egg mixture:

    • Crack the eggs into a bowl, add the milk (if using), and whisk until fully combined. Season with a pinch of salt and pepper.
  • Cook the omelette:

    • Heat the butter or oil in a non-stick skillet over medium heat. Pour in the whisked eggs, tilting the pan to spread the mixture evenly. Cook undisturbed for about 2 minutes, or until the bottom is set but the top is still slightly runny.
  • Add the filling:

    • Sprinkle the cheese (if using) over one half of the omelette, then spoon the chicken filling on top. Carefully fold the other half of the omelette over the filling using a spatula.
  • Finish cooking:
