Description

These Chicken Mashed Potato Bowls are the ultimate cozy comfort meal—loaded with fluffy mashed potatoes, juicy seasoned chicken, sweet corn, melted cheddar cheese, and warm savory gravy. Perfect for busy nights, picky eaters, or whenever you’re craving a hearty, soul-warming dinner.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts, cut into bite-size pieces

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • Salt and pepper, to taste

  • 12 tbsp olive oil

  • 4 cups mashed potatoes (homemade or store-bought)

  • 1 cup corn kernels (frozen or canned)

  • 1 cup shredded cheddar cheese

  • 1 ½ cups prepared gravy (chicken or brown)

  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. In a bowl, season the chicken pieces with garlic powder, onion powder, paprika, salt, and pepper. Toss until evenly coated.

  2. Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 7–9 minutes, stirring occasionally, until browned and cooked through. Set aside.

  3. Warm the prepared gravy in a saucepan over low heat.

  4. Heat corn according to package directions or warm in a small saucepan if canned.

  5. Prepare or reheat the mashed potatoes until hot and creamy.

  6. Assemble each bowl by adding a generous scoop of mashed potatoes.

  7. Top with warm corn and cooked chicken pieces.

  8. Drizzle gravy over the bowl, then sprinkle cheddar cheese so it melts.

  9. Garnish with fresh parsley and serve immediately.

Notes

Rotisserie chicken works great for a shortcut—just warm and season lightly.
Use instant mashed potatoes on busy nights—they work perfectly in this recipe.
Swap cheddar for pepper jack or mozzarella for a different flavor profile.
