Description

This Chicken Kiev Pasta is the ultimate comfort food mash-up—creamy penne pasta, juicy garlic-herb chicken, and a golden, buttery breadcrumb topping. It’s rich, cozy, and easy enough for a weeknight, yet elegant enough for guests!


Ingredients

  • 1 tbsp olive oil

  • 2 tbsp unsalted butter, divided

  • 1 lb boneless skinless chicken breasts (or thighs), cut into chunks

  • 1 tsp garlic powder

  • 1 tsp dried parsley

  • 1 small onion, chopped

  • 3 garlic cloves, minced

  • ½ tsp salt (adjust to taste)

  • ½ tsp freshly ground black pepper

  • 12 oz penne pasta

  • 2 ½ cups low-sodium chicken broth

  • 1 cup milk (any kind, including plant-based)

  • ½ cup grated Parmesan cheese

  • 2 tbsp fresh chopped parsley

Breadcrumb Topping:

  • 1 tbsp unsalted butter

  • ½ cup breadcrumbs

  • 1 tsp garlic powder

  • 1 tbsp dried parsley


Instructions

  1. In a large skillet or Dutch oven, heat olive oil and 1 tablespoon of butter over medium heat.

  2. Season chicken with garlic powder and dried parsley, then add to the pan. Sauté until no longer pink and lightly browned.

  3. Add chopped onion and garlic. Cook for 2–3 minutes until softened. Season with salt and pepper.

  4. Add penne pasta, chicken broth, and milk. Stir and bring to a gentle boil. Reduce heat and simmer uncovered for 15 minutes or until pasta is tender, stirring occasionally.

  5. Stir in Parmesan cheese and fresh parsley. Remove from heat.

  6. In a separate skillet, melt the remaining 1 tablespoon of butter. Add breadcrumbs, garlic powder, and dried parsley. Toast over medium heat until golden and crispy.

  7. Sprinkle the breadcrumb topping over the pasta and serve hot!

Notes

You can substitute chicken thighs or turkey breast for the chicken breasts.
Add a splash more broth or milk if the sauce thickens too much while cooking.
For extra zing, finish with a squeeze of lemon juice.
Leftovers keep well for 3 days in the fridge—reheat with a splash of milk or broth.
