Description
This Chicken in Boursin Sauce is creamy, garlicky, and full of rich flavor—perfect for busy weeknights or impressing guests. Ready in just 30 minutes, it pairs beautifully with rice, mashed potatoes, or crusty bread!
Ingredients
4 boneless, skinless chicken breasts (or thighs)
Salt and black pepper, to taste
2 tablespoons olive oil
3 cloves garlic, minced
1 cup chicken broth
1 (5.2 oz) package Boursin cheese (Garlic & Fine Herbs)
½ cup heavy cream
1 tablespoon Dijon mustard (optional)
Fresh thyme or parsley, for garnish
Instructions
Pat the chicken dry and season both sides with salt and black pepper.
Heat olive oil in a large skillet over medium heat. Sear the chicken for 5–7 minutes per side until golden and cooked through. Remove and set aside.
In the same pan, add minced garlic and sauté for 30 seconds until fragrant.
Pour in chicken broth, scraping up browned bits from the skillet.
Stir in the Boursin cheese until melted and creamy.
Add heavy cream and Dijon mustard (if using), then simmer for 3–5 minutes until slightly thickened.
Return the chicken to the skillet and spoon sauce over the top. Simmer for another 2–3 minutes.
Garnish with fresh thyme or parsley and serve immediately
Notes
You can use chicken thighs for a juicier option.
Don’t skip deglazing the pan—those browned bits are full of flavor!
For a lighter option, use half-and-half instead of heavy cream.
Great served with mashed potatoes, rice, or over pasta.
