Ingredients
1 (30 oz) bag frozen hash browns, slightly thawed
2 cups cooked chicken, chopped (rotisserie works great)
½ cup bacon bits
1½ cups shredded cheddar cheese (divided)
1 can (10.5 oz) condensed cream of chicken soup
½ cup milk
1 cup frozen mixed vegetables, slightly thawed (peas, carrots, corn)
½ tsp dried thyme
Topping:
1 sleeve Ritz crackers, crushed
½ cup shredded cheddar cheese
Instructions
Preheat oven to 400°F. Lightly grease a 7×11” baking dish.
In a large bowl, combine hash browns, chicken, bacon bits, 1 cup cheddar cheese, cream of chicken soup, milk, vegetables, and thyme. Mix well.
Spread the mixture evenly into the prepared baking dish.
In a small bowl, mix crushed Ritz crackers with the remaining ½ cup cheddar cheese. Sprinkle over the casserole.
Cover with foil and bake for 30 minutes.
Remove foil and bake for an additional 15 minutes, until topping is golden and crispy.
Let rest for 10–15 minutes before serving.
Notes
You can substitute the cream of chicken soup with a homemade version if preferred.
Add extra veggies like chopped spinach or bell peppers for more color and nutrients.
Want a spicy kick? Try tossing in a pinch of cayenne or some chopped jalapeños.
