Ingredients
For the frittata:
- 2 tablespoons olive oil or butter
- 1 small onion, finely chopped
- 1 red bell pepper, diced
- 1 cup cooked chicken, shredded or diced (rotisserie chicken works great!)
- 1 cup baby spinach (optional)
- 8 large eggs
- ½ cup milk or heavy cream
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon smoked paprika (optional)
For the toppings:
- ½ cup shredded cheddar cheese (or mozzarella, feta, or your favorite cheese)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
Preheat the oven: Set your oven to 375°F (190°C).
Prepare the filling:
- Heat the olive oil (or butter) in an oven-safe skillet (like a cast iron pan) over medium heat.
- Sauté the onion and bell pepper for 3-4 minutes until softened. Add the cooked chicken and baby spinach (if using) and cook for another 2 minutes. Remove the skillet from heat and set aside.
Whisk the eggs: In a large bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and smoked paprika.
Assemble the frittata: Pour the egg mixture into the skillet over the chicken and vegetables, spreading everything evenly. Sprinkle the shredded cheese on top.
Bake the frittata: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is lightly golden. (To check, insert a knife into the center; it should come out clean.)
Cool and serve: Let the frittata cool for 5 minutes before slicing. Garnish with fresh parsley and serve warm.
Notes
- Vegetable options: Feel free to swap or add veggies like mushrooms, zucchini, or cherry tomatoes.
