  • 2 large carrots , chopped
  • 3 celery stalks , chopped

  • 4 cloves garlic , minced

  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper , to taste

Instructions

  1. Prepare the Chicken Drumsticks : Pat the drumsticks dry with paper towels. Season lightly with salt and pepper.
  2. Sear the Drumsticks : Heat 1 tablespoon of oil in a large pot over medium-high heat. Add the drumsticks and sear until golden brown on all sides (about 5 minutes per side). Remove and set aside.
  3. Sauté Vegetables : In the same pot, add the chopped onions, carrots, and celery. Cook for 5-7 minutes until softened. Stir in the minced garlic and cook for another minute.
  4. Simmer the Soup : Return the drumsticks to the pot. Pour in the chicken broth (or water), ensuring the drumsticks are fully submerged. Add thyme sprigs, bay leaves, and additional seasoning if desired.
  5. Cook Until Tender : Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 45-60 minutes, skimming off any foam that rises to the surface.
  6. Shred the Chicken : Once the drumsticks are tender, remove them from the pot. Shred the meat and return it to the soup.
  7. Serve Hot : Ladle the soup into bowls, garnish with fresh parsley, and serve with crusty bread or crackers.

Notes

For an extra creamy texture, stir in a splash of heavy cream before serving.
