For assembling the sandwiches:
- 4 large croissants, halved
- 4 leaves of butter lettuce (or your preferred lettuce)
- 1–2 medium tomatoes, sliced
- Optional: sliced cheese (Swiss or provolone work beautifully)
Instructions
Prepare the chicken filling:
- In a medium bowl, combine the cooked chicken, mayonnaise, Dijon mustard, honey, celery, red onion, lemon juice, salt, and black pepper. Mix well until everything is evenly coated. Adjust the seasoning to taste, if needed.
Assemble the sandwiches:
- Slice each croissant in half horizontally. On the bottom half of each croissant, layer a leaf of lettuce and 2-3 slices of tomato.
- Spoon the chicken mixture generously on top of the tomatoes. If using cheese, add a slice on top of the chicken mixture.
- Place the top half of the croissant over the filling.
